Okumidori — “deep green” — lives up to its name with one of the densest chlorophyll profiles among matcha cultivars. A late-budding variety, it grows slowly in autumn’s extended shade, concentrating sweetness and amino acids over a longer maturation window. The 33% roast introduces a quiet, nutty undertone that frames its depth without overshadowing it.
A cross between Yabukita and Asatsuyu, Saemidori is prized for its brilliant emerald hue and exceptionally high L-theanine content. Known in Japan as the “clearest green,” it produces matcha of remarkable clarity and a silky, full-bodied texture.
